    Although the smell of fresh bread is usually a welcome indicator of a
pending meal, here it is almost too much of a good thing.  This is a 
steamy, humid kitchen where the buttery bakes its bread.  The south wall
is practically a furnace with two small stoves and the door of a large,
walk-in oven--all on one wall.  There are shelves on the west wall which
contain various baking ingredients, including some sacks of flour.

are a hollow flue that overlap the coals to remove smoke.
