The general rule was that it was down to the coding ainur discretion. In cases of argument I believe the consensus was to go with the original British english Tolkien used.

Yeah but in a creepy way 'I speak the Queen's English on the MUD because that's what the book was written in.' Why not speak American English because that's what it was coded in, it's where the server is and it's the nationality of all the founders?:P

As a matter of preference I generally use British/world spellings rather than American ones on the MUD (since the books were written by a British guy), unless the British versions just look horrible, like 'gaoler'. That's just me... QC never set a standard, so you can't get reward money for typo reporting either. Only rarely do I use the quotation scheme in the books, though, with ' and ' reversed from normal American usage.
In any case, Guruk is not an American and there's no reason he should spell like one.

I gotta fess up to the blame for this. Adanethel asked me earlier today if it was spelled 'apologize' or 'apologise'. Naturally, I fell out of my chair at the prospect of Adanethel apologizing for anything, not knowing it was merely for the purpose of correcting Guruk. It was a combination of that and knowing Adanethel's never apologized for anything in his life so it would make good sense that he'd be entirely unfamiliar with the word. In any event, I did mention that the correct spelling was with a z and it appears that technically that is incorrect. I apologiz/se.
Apologise = American (Webster's Dictionary) spelling.
Apologize = British (Oxford Dictionary) spelling.
It comes in handy for lots of other things!
